Orzo Pesto Pasta Salad

This incredibly easy pesto orzo salad recipe is prepared with Kinda Co. Vegan Greek Style Cheese and lots of fresh, crunchy vegetables. It is so light, refreshing, and bursting with summertime goodness, making it the ideal dish for your next picnic in the sun.

Begin by chopping the peppers, cucumber, olives, sun-dried tomatoes, and greek style cheese into 1-centimetre cubes.

Fill a medium-large saucepan with 1 litre of boiling water and add a generous amount of salt and 1 tablespoon of olive oil. Now pour in the orzo pasta and cook for 6–8 minutes, making sure to stir regularly.

Check to see if the orzo is ready by biting into a small piece of orzo pasta. If there’s no white centre, it's cooked. Take off the heat and drain well. Once drained, pour back into the pan and spoon in the pesto, garlic purée, olive oil, and all the vegetables. Stir well, and then add the rest of your ingredients. You can add more olive oil if needed.

Season well with salt and pepper and serve warm, or place in the fridge and have as a chilled summer salad.
